What You'll Need

  • 1 cup whole milk
  • 1 tablespoon white vinegar
  • Fine mesh strainer or cheesecloth
  • Small bowl
  • 1/2 teaspoon baking soda
  • Natural pigment or food colouring
  • Spoon for mixing

Steps

  1. Gently heat 1 cup of whole milk in a pot until warm to the touch (approximately 43 degrees C / 110 degrees F) – do not boil.
  2. Remove from heat. Add 1 tablespoon of white vinegar and stir gently. Wait 1-2 minutes until curds form and the mixture separates.
  3. Strain the mixture through a fine mesh strainer or cheesecloth into a bowl, separating the curds from the liquid (whey).
  4. Press the curds gently to remove as much liquid as possible.
  5. Transfer curds to a clean bowl and mix in 1/2 teaspoon of baking soda. Stir well – the mixture will bubble slightly as it neutralizes.
  6. Add your chosen pigment (natural pigment powder or a few drops of food colouring) and stir until smooth and evenly coloured.
