What You'll Need
1 cup whole milk
1 tablespoon white vinegar
Fine mesh strainer or cheesecloth
Small bowl
1/2 teaspoon baking soda
Natural pigment or food colouring
Spoon for mixing
Steps
Gently heat 1 cup of whole milk in a pot until warm to the touch (approximately 43 degrees C / 110 degrees F) – do not boil.
Remove from heat. Add 1 tablespoon of white vinegar and stir gently. Wait 1-2 minutes until curds form and the mixture separates.
Strain the mixture through a fine mesh strainer or cheesecloth into a bowl, separating the curds from the liquid (whey).
Press the curds gently to remove as much liquid as possible.
Transfer curds to a clean bowl and mix in 1/2 teaspoon of baking soda. Stir well – the mixture will bubble slightly as it neutralizes.
Add your chosen pigment (natural pigment powder or a few drops of food colouring) and stir until smooth and evenly coloured.
