Jammy roasted raspberries blended with Ontario milk make a refreshing, creamy and super-flavourful treat during berry season.
Preheat oven to 425°F (220°C). In a 13- x 9-inch (33 x 23 cm) pan, combine raspberries and sugar. Roast, stirring occasionally, for 15 to 20 minutes or until juices are bubbling and slightly reduced. Let cool slightly.
In blender, combine milk, raspberry mixture, vanilla and salt. Blend until smooth, then divide among 8 ice pop moulds. Freeze for 3 to 4 hours or until frozen.
Replace milk with buttermilk for a tangy treat. And, when in season, substitute sliced strawberries, peaches or apricots and a pinch of ground cardamom for strawberries. Parental supervision is required to make this recipe!
